The course begins with an introduction to the history of tofu in Vietnam and its role in local diets, followed by a hands-on demonstration of the entire tofu-making process. Under the expert guidance of our local chef, participants will begin by selecting high-quality soybeans, understanding their selection's impact on the final product. The process will include soaking and grinding the soybeans, cooking the mixture, and expertly curdling it with a coagulant. You'll learn to recognize the textures and consistencies that yield the best results, ultimately resulting in fresh, handmade tofu.
